Michael Rusch and Eric Ellsworth first met on a plane headed for London. Today, they're operating an English-style pub in St. Francis.
They named their pub Carleton Grange after the building that housed them and other foreign exchange students in North London. And once they'd returned to the States, they remembered many of the good times they had in English pubs.
That's the model they used for their new combination pub and restaurant, which opened last May. And while the atmosphere is English, the menu is mostly American, featuring wood-fired pizzas alongside baskets of fish and chips. While they have mostly American and Italian ingredients, five of the six pizzas offered have English names like Knightsbridge, Piccadilly Circus and King's Cross.
There's also a section of baked sandwiches called Pub Toasties. The English version layers thickly cut bacon, cheddar cheese and tomato, but it's made with pesto on Italian bread.
Menu spotlight
While it's named after the English village of Cheddar, cheddar cheese can be made anywhere in the world. It comes in two colors: white and the familiar orange seen in Wisconsin. That bright hue comes from a natural coloring agent called annatto, which is widely used in Puerto Rican dishes.
